Great Paleo Breakfast

This is a repost from awhile back but worth sharing again!  This is GREAT for morning or mid-morning meal!!

This is a homemade original.

Sweet Potato Hash

The goods:

1 sweet potato shredded with cheese grater

2 or 3 strips of bacon, cooked and diced or more if you REALLY love bacon

1/2 green pepper chopped

1/4 onion chopped

1tsp chili powder

1tsp cumin

1/2 tsp paprika

1 garlic clove

salt and pepper (just sprinkle some in)

a couple of eggs (depends how hungry you are)

2 tbs coconut oil

The process….

In a medium frying pan cook the sweet potatoes, green pepper and onion until soft…about 8-10 minutes. Toss in the remainder of the ingredients and cook thoroughly…roughly 5-6 minutes. Put the hash mixture on your plate. Add coconut oil to the pan and cook the eggs sunny side up or fried the way you like it. Put the egg on the hash. ENJOY!!
