Keeping the breakfast theme…

This is a little different but definately delicious!   Good for breakfast and/or snack.

Eggplant Hole in the Head (courtesy of Make it Paleo)

1 large eggplant

1tbs extra virgin olive oil

1 tsp coconut oil

4 eggs

sea salt and pepper to taste

1 green onion (diced)

1.  Preheat grill to high heat

2.  Rinse the eggplant, cut into 1 inch thick slices

3.  Brush eggplant with olive oil, sprinkle with some sea salt

4.  Grill eggplant for 3-4 mins per side

5.  Remove from grill and cut a hole in the center of the sliced eggplant using a circular cookie cutter or small cup

6.  Saute the eggplant in a frying pan over medium head with the coconut oil.  Crack one egg into center of each eggplant slice

7.  Allow egg to cook for 3-4 minutes, then carefully flip

8.  Cook for an additional 3-4 mins

9.  Sea salt and pepper to taste and serve with the sliced green onion as a garnish
